Strawberry Rhubarb Cobbler Recipe

4 c. sliced rhubarb and an equal amount of strawberries.
1/2 to 3/4 c. of sugar
2 tbsp. of cornstarch
1/4 c. of water
2 tbsp. of butter…cut into small pieces

1/4 c. flour
1 -1/2 tsp. baking powder
2 tbsp. sugar
1/4 c. butter
1/2 c. milk
1 egg

Place rhubarb and strawberries in a saucepan.
Combine sugar, cornstarch, water, and butter.
Pour over fruit. bring to boil, stir, reduce heat and simmer for 5 minutes.
Pour the fruit mix into 8×8 Pyrex glass baking dish
Combine flour, baking powder, and sugar.
Cut in butter until crumbly.
Mix egg and milk, add to flour mixture, stir until moistened.
Drop by spoonfuls.
Bake 400° for 20-25 minutes until brown.
Serve warm with vanilla ice cream and/or whipped cream.
