Chicken Parmesan Recipe


8 Chicken breasts or other pieces

1 Cup fine bread crumbs

2/3 Cup Parmesan cheese

4 Tablespoons fresh minced parsley

1 1/2 Teaspoons salt

1 1/2 Teaspoons pepper

1/2 Cup melted butter

3 or 4 Cloves or crushed garlic

4 Tablespoons fresh lemon juice


4 Tablespoons Vermouth (yes…Vermouth!)

Blend the bread crumbs, cheese, parsley, salt and pepper. Blend melted butter, garlic and lemon juice.

Dip the chicken in the butter and then in the bread crumb mix. Place each piece in a greased casserole pan and drizzle the remaining butter and bread crumbs onto the chicken, then sprinkle with paprika and add vermouth. Bake at 350 degrees for about 50 to 55 minutes (165 degrees).
