Apricot Cinnamon Crumb Coffee Cake Recipe

8 – Apricots, halved
2 c. – flour
3/4 c. – Sugar
1 T. – Baking Powder
1/2 t. – Salt
1/2 c. – Shortening
1 t. – Cinnamon
2 T. – Sugar
1 Lg Egg, beaten
3/4 c. Milk
2 T. Melted Butter
2 T. Powdered sugar

Preheat oven to 350 degrees.
Grease 9 x13 pan.
In a large bowl combine flour, sugar, salt, and baking powder. Cut in shortening till it is pea-sized. ( For Streusel topping. Place 1/2 c. of the flour/shortening mixture in a small bowl, stir in 2 T. sugar and cinnamon, set aside. See note). Stir in milk and egg in the remaining flour mixture till just moistened. Spread batter in prepared pan. Drizzle with melted butter. Lay Apricot halves on the batter, sprinkle with Streusel Topping. Bake for 30 – 35 minutes.

Blend powdered sugar and enough milk to make powdered sugar icing loose.
Drizzle icing over warm cake.
